4Tablespoonsbuttersoftened
4TablespoonsParmesan cheesegrated
2cupsGruyere cheeseshredded
½cupfresh spinach leaves(add more or less to your liking)
Instructions
Tuna Fish Salad
Open each can of tuna, drain, and sprinkle a little lemon juice over fish.
In a medium bowl, combine tuna fish, chopped celery, onion, pickles and mayonnaise. Stir well, breaking up tuna as you mix.
Assembling Sandwich
Lay 8 slices of bread out and butter one side of each slice.
Evenly divide the Parmesan cheese and sprinkle on top of the buttered side of the slices. Press gently so it adheres to the butter.
Place 4 slices, butter-side down, in a large skillet or griddle pan. Take half of the Gruyere cheese and divide evenly between the 4 slices in the skillet. Dollop the tuna fish on the cheese and spread carefully so cheese stays in place. Add a few leaves of spinach, if desired, and top with the remaining Gruyere cheese. Place the remaining slices of bread on top of the cheese, buttered side up, making a sandwich.
Turn the heat on stovetop to medium or medium low and cook one side until it is brown, usually 3-4 minutes. Carefully hold the sandwich together while you flip it and brown the other side, about 2-3 minutes. If cheese hasn't melted sufficiently, cover the pan for another minute to two.
It is ready when both sides are golden brown and the cheese is all melty. Serve immediately.
