    4. Lay a few spinach leaves on top of the tuna salad then finish by topping each sandwich with the remaining gruyere cheese.
    5. Place your remaining bread slices on top of the cheese, buttered side up.
    6. Turn stove to medium heat and cook the sandwich for 3-4 minutes or until bread is nice and toasty. Carefully turn over and cook for another 3 minutes or until golden brown and the cheese is melted.

    Ingredients

    Tuna Fish Salad

    • 10 ounces white albacore tuna in water drained (2 5-oz cans)
    • 1 teaspoon lemon juice
    • ½ cup celery chopped
    • ¼ cup onion chopped
    • ¼ cup pickles chopped
    • ½ cup mayonnaise

    Assembling sandwich

    • 8 slices bread sourdough, rye, or whole grain
    • 4 Tablespoons butter softened
    • 4 Tablespoons Parmesan cheese grated
    • 2 cups Gruyere cheese shredded
    • ½ cup fresh spinach leaves (add more or less to your liking)

    Instructions

    Tuna Fish Salad

    • Open each can of tuna, drain, and sprinkle a little lemon juice over fish.
    • In a medium bowl, combine tuna fish, chopped celery, onion, pickles and mayonnaise. Stir well, breaking up tuna as you mix.

    Assembling Sandwich

    • Lay 8 slices of bread out and butter one side of each slice.
    • Evenly divide the Parmesan cheese and sprinkle on top of the buttered side of the slices. Press gently so it adheres to the butter.
    • Place 4 slices, butter-side down, in a large skillet or griddle pan. Take half of the Gruyere cheese and divide evenly between the 4 slices in the skillet. Dollop the tuna fish on the cheese and spread carefully so cheese stays in place. Add a few leaves of spinach, if desired, and top with the remaining Gruyere cheese. Place the remaining slices of bread on top of the cheese, buttered side up, making a sandwich.
    • Turn the heat on stovetop to medium or medium low and cook one side until it is brown, usually 3-4 minutes. Carefully hold the sandwich together while you flip it and brown the other side, about 2-3 minutes. If cheese hasn't melted sufficiently, cover the pan for another minute to two.
    • It is ready when both sides are golden brown and the cheese is all melty. Serve immediately.
